Ingredients

Per Serving
  • Skim cow’s milk: ½ cup
  • Grated skim paneer (cottage cheese): ¼ cup
  • Sugar substitute (stevia leaves): ¼ tsp
  • Cardamom powder: a pinch
  • Saffron: few strands

Note: 1 cup = 200 ml, ½ cup = 100 ml, 1 tsp = 5 gm, 1 tbsp = 15 gm

*tsp = teaspoon, tbsp = tablespoon

Method

  • Heat milk in a wide non-stick pan and cook on medium flame for 5–6 minutes or until it comes to a gentle boil. Let it cool.
  • Once cooled, add stevia and cardamom powder; mix well.
  • Add grated paneer and stir to combine.
  • Refrigerate for at least 1 hour.
  • Serve chilled, garnished with saffron strands.

This kheer is high in protein and contains no added sugar.
• It is a lighter alternative to traditional rice-based kheer and can be a suitable dessert option for people with diabetes who are mindful of sugar and carbohydrate intake.
